baked egg and avocado



Are you getting ready to celebrate? Have you amassed all of your liquids and cute bite sized bits?

Most of you are probably ready to have a wonderful bash with loads of expensive, exotic food and sweet, frothy mixed drinks all of which are bound to sit really well in your stomach. Which leads me to...

What about the aftermath?

This is probably the perfect hangover breakfast. Add to it these lavender potatoes and you're set for a settle-your-stomach meal.

So, while you are at the grocers grab some avocados and eggs. You'll thank me later.

Baked Egg and Avocado
Aluminum foil
2 avocados
4 eggs
Salt and pepper

1. Heat oven to 350 F. Create a boat for the avocado halves with the foil.

2. Cut avocados in half, removing the pit. Scoop some flesh from around the it hole to make enough room for the egg. Place avocado halves in the foil boats. Crack the eggs into the holes. Sprinkle with a lot of salt and pepper.

3. Bake for 10-15 minutes, or until the eggs have set.
