sauteed tomato and french bean melange with balsamic vinegar



Summer time is when all the crazy ingredients and odd juxtapositions fall away. All you have left is the simple goodness of fresh produce. Nothing more needed.

Here is a simple summer dish that puts a spin on your regular steamed veggies. 

Sauteed Tomato and French Bean Melange
Serves 4-6

Ingredients
  • 2 tablespoons olive oil
  • Grape tomatoes, halved
  • French beans, cleaned and trimmed
  • 1 clove garlic, minced
  • Balsamic vinegar
  • Salt and fresh ground pepper, to taste
  • 5-8 basil leaves, sliced
Instructions
  1.  Heat oil in a skillet. Add garlic and cook until fragrant. Stir in tomatoes and beans. Add vinegar, salt and pepper and cover. Cook until beans are tender and tomatoes have wilted, about 10 minutes.
